If I am just cooking for me omelettes are my meal of choice, using whatever is in the garden or fridge. This was particularly nice.
Heat omelette pan with a tablespoon each of butter and olive oil. Slice red peppers and saute for a minute, add sliced zucchini and saute both until just tender. Beat together 3 eggs, a couple of tablespoons of water or milk, salt and pepper, and pour over vegetables.
As the eggs are setting cover with baby spinach leaves, fold in pan and remove onto plate. Top with avocado.
A good, tasty meal for one doesn’t get much easier or quicker than omelettes!

Yes, YUM! I make variations of this more than once a week and I love it! Sort of ‘salad in a pan’, isn’t it? I like mushrooms fried a bit with onions to start, then the rest added. Mushrooms give it a meaty flavour that I like. But any veg, really. Carrots, celery, as you say, whatever’s on hand. I haven’t done this since Christmas, as we have leftovers from my sister, but soon. ~ Linne

Yes! A salad in a pan and how yummy. We do a pan of sauteed vegetables with mushrooms, peppers, red onion etc and mmm, very good

You are right there! Now that socca is de rigeur in the vegan community I can have an “omelette” of sorts myself. A great filling meal for one and you can add just about anything you like to them (even some of that hummus from your last post 🙂 ).

Yes, they are great fuel and free food here most times. Sometimes I make them full of sauteed mushrooms and asparagus…not so free. Roger doesn’t like them..I guess if they were loaded with bacon and cheese he would 🙂

Oh dear! We FINALLY have managed to get ours properly enclosed (trapped) where they should be. We despaired at one stage we would have to get rid of them but refused to be outsmarted by our chickens…any longer !

I have moderated my murderous desires and am thinking about reducing the flock to manageable proportions and getting rid of the roosters (the main problem)…say 8 chooks would be good for us as Steve is the only one that eats eggs.

Stopping by and just wondering how you are doing. I bet you are outside more often and not in front of the computer! I am busy exercising our fingers + missing the sunshine it has been weeks!!! Hi Robbie 🙂 🙂 We have had visitors coming and going for weeks and I have been filling in at work quite a bit while people on hols AND trying to help in garden. Been busy, busy but had just come on to do a post 🙂 Thank you for asking after me though, much appreciated … I am still alive and kicking.
Our summer is a bit weird this year, lots of rain, cloudy cold days scattered with very warm ones so hit and miss days of gardening!!

Great idea, but I am totally useless at folding omelettes (and flipping pancakes), I really should work on this skill. I tend to pop it under the grill to finish it off.

So am I! Totally useless – and I will tell you a secret, I cut this in 3 pieces to remove from pan…it certainly isn’t all neat and tidy, hence the avocado on top 🙂 Still tasted good!!
