Honey Oat Bars

It wasn’t till I got my recipe book out that I stopped to think how long I have been making this slice, it must be 25 years since I bought this book, it’s pages fell out of the book years ago. This is buttery, sweet and has a nice, slightly chewy texture, it’s also very easy. The recipe has to be followed exactly though, too much dry and not enough butter and honey creates a too crumbly mix.

1 1/2 cups rolled oats

1 1/2 cups sultanas (golden raisins)

3/4 cup self raising flour

3/4 cup raw sugar

3/4 cup coconut

8 oz butter

1 1/2 tablespoons honey (I used golden syrup this time so quite a bit darker than usual)

Preheat oven to 180 deg C or 350 deg F.

 

Line a slice tin with baking paper or grease well.

Melt butter and honey together and add to combined dry ingredients.

Mix and press into tin, bake until golden on top (around 25 – 30 mins) taking care not to overcook.

Slice in tin whilst just warm and remove when cold.

  1. I remember this too Cathy :). (probably because we are sisters and had the good fortune of having a prolific womans weekly baker for a mum 😉 ). Love this blast from the past. Might have to make it for remembrance sake and suffer a few chunks (maybe the whole pan!) with a HUGE mug of tea (another family inheritance 😉 )
