This is one of my husbands favourites and I like making it – it’s quick and easy, it doesn’t need baking and as long as the wet mix is the same anything goes really – it’s versatile as to what can go in.
1/4 cup honey
4 oz (100 g) butter
1/2 cup sugar (I used my own date sugar)
1/4 cup peanut butter
Put in small pan, melt and simmer very gently for 3 minutes (this scorches easily on the bottom so I stir often)
I a large bowl put:
21/2 cups muesli
1 cup coconut
1/2 cup extra dried fruit
1/4 – 1/2 cup seeds (pumpkin, sunflower, chia etc)
Once the honey mixture is cooked pour over the dry ingredients and working quickly mix all together and press into a greased or paper lined slab tin. Cut before completely cold into squares or muesli bar sized pieces. Remove from tin when completely cold and firm.
That looks lovely, I shall be trying this one, especially as I like no-cook slices – no risk of overdone edges!

No baking? Sounds like something I need in my repertoire indeed. I spent most of yesterday baking custard cream biscuits (for Steve) and an enormous quantity of “Quaker Oat Biscuits” for the dogs. I could hear mum (now deceased) saying “what are you using butter for in those biscuits for the dogs!” She used Fairy margarine for all of her cooking and would tut-tut me every time she came over here whenever I would pull out the pound of butter to make anything other than sandwiches. I told her “you are what you eat and Steve doesn’t want to be a Fairy”…it didn’t go down well ;). Consider this recipe pilfered and tucked away till I get back from my daughters. Sorry I haven’t commented on your posts for a while by the way, My RSS Feed Reader is new and it backdated all of my feeds as if I hadn’t read them…I have 469 feeds, it loaded 200 posts from each of them…I had to clear out everything that I didn’t need…it took a while! 😉
