Tomato Sauce (Ketchup) recipe

This is a really nice recipe, sweet and spicy.

3 kg ripe tomatoes, cored and chopped

2 onions, peeled and chopped

5 medium apples, cored and chopped (I left red skins on)

1 1/2 cups white vinegar

2 tablespoons salt

750 g brown sugar

1/2 tsp black pepper

pinch cayenne pepper

juice of two lemons

3/4 ts ground cloves

3/4 ts mixed spice

1 tsp ground ginger

Put tomatoes, apples and onions in a large preserving pot. Cook until soft, cool, and whiz till just a little chunky. Return to pot and add everything else. Stir until sugar dissolved then simmer 1 1/2 hours or till thickened, stirring occasionally. Pour into jars and seal.

This makes around 10 cups.
