Spiced beetroot (beets)

I spent a few years trying different recipes for beetroot and was never quite happy with them – until I found this one on http://www.allotment.org.uk.

1 1/2 kg beetroot, sliced and cooked

2 cups reserved liquid from above

2 cups sugar

2 cups malt vinegar

1/2 tsp salt

1/2 tsp cinnamon

1/2 tsp ground cloves

1/2 tsp ground ginger

1/4 tsp black pepper

Put all ingredients except beetroot in a large pan and bring to boil. Add beetroot and simmer 20 minutes slowly. Bottle into hot sterilised jars topping with extra vinegar if needed. refrigerate once opened.

  1. Steve isn’t a fan of sweet beetroot. He comes from the U.K. and they tend not to add sugar there, just rely on the sweetness of the beets themselves and they prefer a vinegary spicy pickle. I , as a good Aussie, prefer them a bit sweeter. The last batch we made I had a beet that looked like Earthworm Jim! He is still in the jar, floating around in the red pickling liquid as neither Steve nor I can eat his happy little bobbing head! 😉
