I spent a few years trying different recipes for beetroot and was never quite happy with them – until I found this one on http://www.allotment.org.uk.
1 1/2 kg beetroot, sliced and cooked
2 cups reserved liquid from above
2 cups sugar
2 cups malt vinegar
1/2 tsp salt
1/2 tsp cinnamon
1/2 tsp ground cloves
1/2 tsp ground ginger
1/4 tsp black pepper
Put all ingredients except beetroot in a large pan and bring to boil. Add beetroot and simmer 20 minutes slowly. Bottle into hot sterilised jars topping with extra vinegar if needed. refrigerate once opened.
