Wasabi Pea and Peanut Toffee Clusters

These are a little different, very morish. They are an economical treat and sweet but not too naughty. I make these quite often.

1 cup sugar

1 cup water

1 – 1 1/2 cups peanuts

100 grams wasabi flavoured dried peas

Make a toffee by combining sugar and water in pan. Stir lightly till dissolved, then bring to a light boil (DO NOT STIR AGAIN) and cook until about half the quantity and it turns to a light golden colour – approx 12-15 minutes. This can go from light to burnt very quickly. While this is cooking combine peas and peanuts in a bowl.


There are 2 methods that can be used now according to preference. Either the peas and peanuts can be placed in the bottom of a greased baking dish and the toffee can be slowly poured over, this gives a brittle that can be broken up.

Or, the method I like that happened by mistake 🙂 I decided to do things easier and stir them into the toffee in the pot and tip out onto dish. This cools very quickly and you have to move superfast to get out of pan, but it makes a frosty, rocky type of toffee. This can be broken up as you put into dish. Sometimes I add sesame or sunflower seeds etc to these.
