Butter / Olive oil Spread

I love real butter, hate margarine. The butter is hard to keep soft though when the weather gets cooler so I make a spread with 500 g of butter, 1/2 tsp salt and 1 1/2 cups of light olive oil. Soften butter in the microwave and put in whiz, whiz till smooth. Slowly pour in the olive oil while still whizzing and process till very smooth, no lumps. Pour into containers, makes around 750 grams or so spread.

A cheaper option is to use a cheaper oil and get get away with a little more oil.Image
