The yummiest sweet zucchini chutney

IMG_2006I make this every year and it’s perfect for the late summer glut of zucchini, onions and tomatoes. It’s sweet, spicy and very moreish – lovely with meats and cheeses. This year I am making around 2 dozen jars.

500 g onions

i.5 kg zucchini

500g ripe tomatoes

100 g dates

50 g sultanas

500 ml malt vinegar

2 tsp allspice

2 tsp ground ginger

2 tbsp salt

2 tsp black pepper

1.5 kg brown sugar

Chop all veges and dried fruits and put in large pan with half the vinegar. Simmer till soft and add spices, salt & pepper and simmer 15 minutes. Add other half of vinegar and brown sugar and simmer till thick. Bottle in steralised jars, makes around 8 x 375g jars.
